Foreword

 

 

This standard will replace the GB 2762-2012 National Food Safety Standards: Limit for Contaminations in Food.

Compared with GB2762-2012, the main changes in this standard are as follows:

——To delete requirements on the rare earth limit;

——To modify the application principle;

——To increase the lead limit requirement in Spirulina and its product;

——To adjust the limit requirement of cadmium in daylily;

——To increase the limit requirements of contaminations in formula food for special medical purposes, supplementary food supplements, sports nutrition food, and nutrition supplementary food for pregnant and lactating women;

——To update the standard number of testing methods;

——To add the specification of limit testing requirements for inorganic arsenic;

——To modify Annex A.

 

National Food Safety Standards

Limit for Contaminations in Food

1 Scope

This standard specifies the limit indexes of lead, cadmium, mercury, arsenic, tin, nickel, chromium, nitrite, nitrate, benzoapyrene, N-Nitrosodimethylamine, polychlorinated biphenyls, and 3-chloro-1,2-propanediol in food.

2 Terms and Definitions

2.1 Contaminations

Unintentionally added hazardous chemical substances created in the course of production (including crop cultivation, animal rearing, and veterinary medicine), processing, packaging, storage, transportation, marketing, and even consumption, or introduced by environmental pollution.

The contaminations specified in this Standard refer to contaminations except for pesticide residues, veterinary drug residues, biological toxins and radioactive substances.

2.2 Edible Parts

The parts for consumption obtained after the non-edible parts are removed by mechanical means (such as grinding of grain, peeling of fruit, husking of nuts, boning of meat, stinging of fish, shelling of shellfish, etc.).

Note 1: Removal of non-edible parts shall not be done by any non-mechanical means (e. g. crude vegetable oil refining process).

Note 2: The quantity of edible parts when producing different products from the same raw food materials may vary according to the production process. For example, when wheat is processed into oatmeal and whole wheat flour, the edible part is measured at 100%, and when wheat is processed into wheat flour, the edible part is converted according to the flour extraction rate.

2.3 Limit

The maximum content of contaminations allowed in edible parts of raw food materials and/or finished food product.

3 Principles of Application

3.1 Regardless of whether a contamination limit is established or not, control measures should be taken by food producers and processors to bring the content of contaminations in food to a minimum level.

3.2 This standard lists contaminations that may pose a greater risk to public health, and food with limits have a greater impact on consumer dietary exposure.

3.3 The Explanation of Food Category (Name) (Annex A) used to define the scope of application of contamination limits is applicable only to this standard. When a certain contamination limit is applied to a certain category (name) of food, all categories of food in that category (name) shall apply unless otherwise specified.

3.4 The limit for contaminations in food shall be measured in the usual edible part of the food, unless otherwise specified.

3.5 Where a limit index is required for a certain product, the contamination limit in the dried product shall be converted by the contamination limit in the corresponding fresh food combined with the dehydration rate or concentration rate. Dehydration or concentration rate can be determined by analysis of food, the information provided by producers, and other available data, unless otherwise specified.

4 Index Requirements

4.1 Lead
